The Shrimp
½ lbs. cleaned deveined shrimp
juice of ½ lemon
1 or 2 cloves of garlic
3 tbsp. chopped fresh coriander
salt and pepper
Fry the shrimp with the garlic in hot oliver
oil over medium heat. When the shrimp have curled
and turned pink and are barely done, add the
lemon juice, salt and pepper and fresh coriander,
stir for two more minutes. Pour in the coriander
sauce, strring and tossing the shrimp only to heat
the sauce through. Do not cook sauce Serve
immediately. Serves four.
The Sauce
½ cup chopped onion
2 tbsp. olive oil
2 cloves of garlic
5 whole green chiles seeded
6 fresh tomatillos or 1 13oz. can drained
½ cup fresh coriander packed tight
If using fresh tomatillos, toss them in a hot
frying pan until they soften. Fry the onion over
medium heat in oil until transparent, add the
garlic and stir for wominutes. Put the onions in
a blender jar with tillos,chiles and coriander.
Blend til smooth. Add salt if needed. Put aside.
Can be made a day ahead.
