Creme-De-Menthe Squares



    INGREDIENTS NEEDED:

    1 1/4 cups Butter or Margarine
    1/2 cup of Unsweetened Cocoa Powder
    3 1/2 cups sifted Powdered Sugar
    1 beaten Egg
    1 teaspoon Vanilla
    2 cups finely crushed Graham Crackers
    1/3 cup Green Creme-De-Menthe
    1 1/2 cups Semi-sweet Chocolate pieces

    DIRECTIONS:

    In heavy saucepan combine 1/2 cup butter and cocoa powder. Cook and stir over low heat till butter is melted. Remove from heat; stir in 1/2 cup of powdered sugar, egg and vanilla. Add graham crackers; stir till combined. Press into bottom of ungreased 13" X 9" X 2" baking pan.

    Melt 1/2 cup of butter and margarine. In mixing bowl combine melted butter and creme-de-menthe. Gradually add remaining powdered sugar, beating with electric mixer till smooth. Spread over chocolate layer. Chill in refrigerator for 1 hour. In heavy small saucepan, combine remaining 1/4 cup butter and chocolate pieces. Cook and stir over low heat till melted. Spread over mint layer. Cover and chill for 1 to 2 hours or until firm. Cut into small squares. Store in refrigerator. Makes about 96 squares.
