Friatas
Start with 1/2 pound of cheese
onion or cheese jalapeno bread and cut into 1/2" cubes. spread evenly into
a buttered 9 x 13 inch pan. In a bowl beat
9 large eggs
2 cups milk
1 cup shredded jack cheese
1 cup shredded cheddar cheese
1 can diced green chilies
1/2 cup chopped onion
1/4 cup chopped fresh Anaheim chilies
1/4 cup chopped fresh cilantro
1 teaspoon salt
Pour over bread, cover and chill
at least 8 hours
uncover and bake in 350o oven until
barely jiggles when shaken and is brown on top, about 45 minutes. Garnish
with avocado slices and the following fruit salsa

1 firm ripe mango, pit, peel, and
coarsely chop
3 Roma tomatoes, peeled, seeded
and chopped
1/2 cup sliced green onion
2 tablespoons minced fresh Anaheim
chilies
1 clove pressed garlic
3 tablespoons lime juice
1/2 cup chopped cilantro
salt to taste
Scones
1/4 cup dried currents
1 tablespoon brandy
1/2 teaspoon grated orange peel
about 2 cups all purpose flour
about 6 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
about 1/2 cup butter
about 1/2 buttermilk
Microwave first three ingredients
just till warm about 15 sec.
In another bowl mix dry ingredients
and cut in butter until no limps larger than 1/4"
add buttermilk brandy, currents
and orange peel. stir lightly to moisten. If too crumbly add more buttermilk.
Pat dough together into ball and
knead just until dough holds together
flatten dough onto a lightly buttered
baking sheet into 1/2" thick round
With floured knife score into quarters
and eighths
Brush dough with about 2 Tablespoons
buttermilk and sprinkle with sugar
bake at 400o until golden brown
20-25 minutes. Serve warm or cool
serve with butter and jam

Cranberry Nut Bread
2 1/3 cups self rising flour
1 cup dried cranberries
1 cup pecans
2 1/2 cups sugar
1 cup ripe bananas
2 teaspoons vanilla
2 large eggs
1 cup melted butter
1 cup buttermilk
Mix flour, pecans, cranberries,
In another bowl mix banana, vanilla,
sugar and eggs until well blended
add butte and buttermilk
add flour mixture and stir till
evenly moistened
butter and flour or spray a nonstick
bunt or tube pan
pour batter into pan and bake in
350o oven about 1 hour until toothpick comes out clean
Cool and turn out onto serving
plate.
To finish out brunch you can
add
sliced tomatoes drizzled with
balsamic vinegar and topped with chopped fresh basil
grilled Italian Sausages
fresh squeezed orange juice
or just about anything
that you want to add.
