SEVEN LAYER COOKIE BARS

1 STICK MARGARINE

1 C GRAHAM CRACKER CRUMBS

1 C SHREDDED COCONUT

1 6 oz PKG CHOCOLATE CHIPS

1 C CHOPPED NUTS

1 6 oz PKG BUTTERSCOTCH CHIPS

1 CAN SWEETENED CONDENSED MILK

MELT MARGARINE IN A 13"X 9" PAN. COOL SLIGHTLY AND GREASE SIDES OF PAN. SPRINKLE CRUMBS EVENLY OVER MELTED MARGARINE; COVER WITH SHREDDED COCONUT, THEN CHOCOLATE CHIPS, THEN BUTTERSCOTCH CHIPS. DRIZZLE EVENLY WITH THE MILK, AND SPRINKLE THE TOP WITH THE NUTS. BAKE 30 MINUTES IN A PREHEATED OVEN AT 350 DEGREES. COOL; CUT INTO SQUARES.

Red's Ultimate "M&M's"® Cookies

Thanks to Sue Moore for this wonderful recipe.

1 cup (2 sticks) butter or margarine, softened

1/2 cup granulated sugar

1/2 cup firmly packed light brown sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/8 teaspoon salt

1 12-ounce package (1 3/4 cups) "M&M's"® Chocolate Mini Baking Bits

3/4 cup chopped nuts (optional)

Directions: Preheat oven to 350°F. In large bowl cream butter and sugars until light and fluffy; beat in egg and vanilla. In medium bowl combine flour, baking soda and salt; blend into creamed mixture. Stir in "M&M's"® Chocolate Mini Baking Bits and nuts, if using. Drop by heaping tablespoonfuls about 2 inches apart onto ungreased cookie sheets. Bake 10 to 13 minutes or until edges are lightly browned and centers are still soft. Do not over bake. Cool 1 minute on cookie sheets; cool completely on wire racks. Store in tightly covered container. Yield: 3 dozen cookies

"NELLIAN" COOKIES

2 C SUGAR

1/4 C COCOA

1/2 C EVAPORATED MILK

1 STICK MARGARINE

2-1/2 C QUICK OATMEAL

1/2 C PEANUT BUTTER

1 t VANILLA

1/2 C BROKEN NUTS (OPTIONAL)

1/2 C RAISINS (OPTIONAL)

1/2 C SHREDDED COCONUT (OPTIONAL)

IN A MEDIUM SAUCEPAN, BRING SUGAR, COCOA, MILK AND MARGARINE TO A BOIL THAT YOU CAN'T STIR DOWN; BOIL FOR 1-1/4 MINUTES MORE. REMOVE FROM HEAT AND ADD VANILLA, PEANUT BUTTER, OATS, AND ANY OR ALL OF THE OPTIONAL INGREDIENTS. STIR UNTIL MIXTURE JUST BEGINS TO HOLD ITS SHAPE. DROP BY SPOONFULS ONTO WAXED PAPER. ALLOW TO COOL AND SET.

NOTE: THEY ARE BETTER IF ALLOWED TO SET OVERNIGHT.

CAKE MIX COOKIES

1 Box yellow cake mix

2 Eggs ½ C Water

1 6oz Pkg. Butterscotch Morsels

½ C Coarsely broken Pecans or English Walnuts (Optional)

Combine all ingredients (Makes a stiff dough) and form into 1" balls. Place on a lightly greased cookie sheet two inches apart. Bake at 350 degrees for 7 minutes.

Alongside sewer-dwelling bands of alligators, bugs in bottles of soda, and other urban myths resides the Neiman Marcus $250 cookie fabrication. NM has never charged anyone anything for a recipe, but the story still persists. Help stamp out untrue gossip by forwarding our free chocolate-chip cookie recipe to any naysayers out there!

½ cup unsalted butter, softened

1 cup brown sugar

3 tablespoons granulated sugar

1 egg 2 tsp. vanilla extract

½ teaspoons baking soda

½ teaspoons baking powder

½ teaspoons salt

1 3/4 cups flour

1 ½ teaspoons instant espresso powder, slightly crushed

8 ounces semisweet chocolate chips

1. Cream the butter with the sugars until fluffy.

2. Beat in the egg and the vanilla extract.

3. Combine the dry ingredients and beat into the butter mixture. Stir in the chocolate chips.

4. Drop by large spoonfuls onto a greased cookie sheet. Bake at 375 degrees for 8-10 minutes, or 10-12 minutes for a crispier cookie.

Makes 12-15 large cookies.
