Peanut Butter Sheet Cake
- 2 C. Flour
- 2.C. Sugar
- 1 tsp. Soda
- 1/2 tsp. Salt
- 1/2 C. Oil
- 1 C. Water
- 1 1/2 Sticks (12 T.) Oleo
- 1/2 C.Peanut Butter
- 1 tsp. Vanilla
- 1/2 C. Buttermilk
- 2 Eggs, well beaten
Preheat oven to 350 degrees, grease and flour 11"x15" cake pan. Combine flour, sugar, baking soda & salt and set aside.
In a saucepan, bring oil, oleo, peanut butter and water to a boil. Pour over dry ingredients and mix well.
Add eggs combined with buttermilk and vanilla to mixture and blend well. Pour batter into pan and bake 15 - 20 minutes. Cool and frost. Makes 2 dozen pieces.
Peanut Butter Frosting
- 1/2 C. Evaporated Milk
- 1 C. Sugar
- 1 T. Oleo
- 1/2 C. Mini marshmallows
- 1/2 C. Crunchy Peanut Butter
- 1 tsp. Vanilla
Bring milk, sugar & oleo to a boil; (Boil 2 1/2 minutes, depending on the humidity.) Remove from heat. Stir in marshmallows, peanut butter and vanilla. Stir until marshmallows and peanut butter are melted. Pour over warm cake and spread.
