6-8 eggs
Whip eggs well. Scramble them with the onion and peppers into an omelette. Put half the cheese in the center. Fold in half and pour salsa over top. Sprinkle with remaining cheese. Serve hot.
1 onion (chopped)
1 bell pepper (chopped)
1 small pkg. shredded cheddar cheese
1 cup salsa
