Quick and Easy Recipes

It seems like we're all in a rush, trying to get things done before the next thing pops up... I hear a lot of people wishing for quick and easy recipes to help make serving their families a nutritious (and delicious) meal an easy task. Here's some recipes that I use from time to time and most are my own creation. Usually after I serve one of these "experimental" dishes to my own husband, I ask "Is it a keeper? Is it something that you'd want me to make again?". These are the ones he's given his full-mouthed seal of approval...

Chili Pie

1 - 1 1/2 lbs. ground beef or turkey
1 medium onion, chopped
1 medium tomato, diced
1 package prepared chili seasonings (like Durkee or McCormick)
2/3 cup water
1 small can diced green chilies(optional)
1 can red kidney beans, drained
1 cup shredded cheddar cheese
1 box Jiffy corn muffin mix
1 egg
1/3- 1/2 cup milk

Brown ground beef with onions. Add tomato, chili seasoning and water. Mix in beans and chilies. Pour in casserole dish. Top with cheese

Mix corn muffin batter according to package directions. Spread on top of meat mixture. Bake at 400 degrees F for 15-10 minutes or until corn bread is done and cheese is melted.

Brownie Blitz

1/2 batch of brownies, already made (I use the "fudgy" kind)
1 4-serving package Jello Instant pudding, Chocolate Flavor (made according to package instructions.)
1 small container of Cool Whip, frozen

Crumble 1/3 of brownies in bottom of a 2 qt glass casserole dish. Top with 1/2 of Cool Whip. Top with 1/2 of pudding. Repeat layers. Top with remaining 1/3 crumbled brownies. May add nuts if desired. Keep refrigerated until ready to serve.

Angel Hair Pasta

1 pkg Angel Hair Pasta
2 ripe tomatoes, chopped (Roma are best)
1 bunch fresh basil, chopped
1-2 cloves fresh garlic, minced
1/4 cup lemon juice
1 tsp fresh ground pepper
salt to taste Prepare pasta according to package directions. In saute' pan, heat 1-2 tbs. olive oil and add garlic (and onion, if desired). When garlic becomes tender, add tomatoes and basil. Simmer to blend flavors and add lemon juice, salt and pepper. Serve hot over just drained pasta. This is good with a salad and crusty Italian bread.

Salmon Patties

1 can salmon, drained, bones and skin removed
1 egg
1 cup crushed crackers (your favorite variety)
1/2 tsp Old Bay seasoning
1/4 cup minced onion
1/4 tsp freshly ground pepper
other seasonings to suit your own taste

Mix ingredients together, blending well. Shape into patties and fry in a hot skillet. For added flavor, cook in bacon grease. (yum!) I always serve with canned green beans, potatoes, a salad and cornbread.

Easy Leftover Vegetable Beef Soup

Save your leftover juices from cooking a pot roast (I do mine in the crockpot) and any vegetables and meat. For an easy meal the next day, cut up the meat and vegetables in bite sized chunks and add other vegetables such as peas, green beans, corn and carrots and potatoes. I also like to add chopped cabbage and a can of diced tomatoes. Combine in large pot and add more water or broth as you see fit. Cook over low heat until the flavors blend and serve with bread or noodles.

No Bake Cheesecake

1 pkg. cream cheese, softened
1/2 cup sugar
2 tsp. lemon juice
2 cups Cool Whip
1 prepared graham cracker crust (or chocolate cookie crust!)

Cream together cream cheese, sugar and lemon juice. Fold in Cool Whip. Pour into crust. Refrigerate to set.

Pasta Salad

This could easily be a main dish as well as a salad course... I'll tell you what I like to add in mine, you add what YOU like.

8-10 oz pasta (tricolor spirals, or plain)
1 cup prepared Italian Dressing (I prefer Kraft or Wish-Bone)
1/2 cup diced green pepper
1/2 cup diced white or red onion
1/2 cup diced cucumber or zucchini
1/2 cup thinly sliced carrots
1/2 cup diced tomato
3/4 cup shredded mild cheddar cheese
(optional)1/2 cup paremesan cheese
(optional)sliced pepperoni

Prepare pasta according to package directions. Drain and rinse in cold water until chilled. Add remaining ingredients and toss to combine. You may also add: diced cooked turkey or ham, broccoli, cauliflower, fresh herbs and any other items you may have on hand. Perfect for a summer dinner.

Enchilada Casserole

Ok, this one may take a little more work, but it's easy and good!

1 lb ground beef
1/2 pkg cream cheese
1 sm. can diced green chilies
1/2 cup diced onion
Mexican Seasonings
1 pkg corn tortillas, cut into 2" strips
1 1/2 cups shredded cheddar cheese
1 can enchilada sauce

Brown ground beef with onions, drain fat. Mix in seasoning, chilies and cream cheese. Line bottom of casserole dish with tortilla strips and layer beef and cheese, repeat layers and pour sauce over top. Top with more cheese. Bake at 350 degrees F for 20 minutes or until cheese has melted and dish is bubbling. Serve with sour cream.

Easy Chicken Pot Pie

2 refrigerated 9" pie crusts
2 cups cooked chicken breasts, diced
2 cups frozen mixed vegetables, thawed under running water
1 can cream of chicken soup
1 can water or milk
salt, pepper, thyme and basil to taste

Line bottom of pie pan with one crust. Mix remaining ingredients and place in crust. Top with remaining crust. Cut slits in top crust to let steam escape while baking. Bake at 375 degrees F until crust is golden and filling is hot and bubbling (about 45 minutes).

Quick Salisbury Steaks

6-8 preformed frozen beef patties
1 can cream of mushroom soup
1 envelope Liptons Beefy Onion soup mix
2/3 cup milk
1/2 cup water
salt, pepper and garlic powder to taste

Thaw patties, brown in skillet. Add remaining ingredients and mix well. Cover and simmer for 20 minutes or until thick gravy has formed and meat is cooked through. Serve with mashed potatoes or noodles.

Chicken Bow Tie Bake

6 oz. bow tie pasta, cooked and drained
1/2 lb. boneless chicken breast, sliced thin
1/2 cup diced red pepper
1 1/2 cup frozen broccoli cuts, thawed
1 can cream of chicken soup
1 can milk or water
1/2 tsp. thyme
1/2 tsp. dill
1/2 tsp. crushed rosemary
1 tsp. garlic powder
1 tsp. onion powder
salt and pepper to taste
1 cup grated sharp cheddar cheese

Brown chicken in oil. Add vegetables and cook until tender. Mix in casserole dish with remaining ingredients and top with grated parmesan cheese. Heat in 350 degree F oven for 30 minutes or heat through on stovetop.

Hamburger Stroganoff

3/4 lb. ground beef
1 medium onion, chopped
1 clove garlic, pressed
1 can cream of mushroom soup
1 sm can mushrooms, drained
1 1/2 cup milk
1 cup water
10 oz. (more or less) egg noodles
1 cup sour cream
salt and pepper to taste

Brown ground beef with onion and garlic, until onion is tender and meat is no longer pink. Drain fat. Add soup, milk, water, mushrooms and mix well. Add noodles and bring to a boil. Reduce heat and simmer until noodles are tender (add more liquid as needed). Remove from heat and stir in sour cream. Add salt and pepper to taste.

Quick Cobbler

Melt one stick of butter
Mix:
1 cup sugar
1 cup Bisquick
3/4 cup milk
Pour in butter

Empty one large can of peaches and juice into a baking dish. Pour Batter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees F until crust is done and fruit is bubbling.
