Easy Leftover Vegetable Beef Soupadded 3/18/99Save your leftover juices from cooking a pot roast (I do mine in the crockpot) and any vegetables and meat. For an easy meal the next day, cut up the meat and vegetables in bite sized chunks and add other vegetables such as peas, green beans, corn and carrots and potatoes. I also like to add chopped cabbage and a can of diced tomatoes. Combine in large pot and add more water or broth as you see fit. Cook over low heat until the flavors blend and serve with bread or noodles.
