TURKEY
OR
CHICKEN
SOUP
(for the soul)
(from a friend)
Leftover Turkey or Chicken with bones(not the neck)
1 Tbsp Dried Oregano
2 tsps Sweet Basil
3-5 Cloves of Crushed Garlic
1 Tbsp Black Pepper (use just 1 tsp or less, if you don't like your soup hot)
2 Tbsp of Dried Parsley
1 Tbsp Marjoram
1 Tbsp Thyme
2-3 (nice size) Bay Leaves
1-2 medium Onion, diced
4 nice Carrots, diced, julienned or sliced
2-3 Celery Stalks, diced
1 small Bell Pepper (green or red) diced
Noodles or rice are optional ( add about 1/2 hour before serving)
1 Tbsp Salt (optional)
Put turkey or chicken pieces in a large pot, at least a 12 quart size pot.
Cover with water.
Add everything else.
Rub the spices in your palms before adding.
Bring the soup to a boil.
Boil strongly for about 5-10 minutes, stirring all the time.
Then cover and simmer for 6-8 hours.
When soup is flavorful, remove the bones from the pot.
Add your rice or noodles about 1/2 hour or so before serving.
Serve with a hearty bread, such as French bread
