Enjoy some great apple recipes and celebrate the fall season!
BAKED APPLES IN MAPLE SYRUP
(Serves 4)
4 large baking apples
2 Tablespoons lemon juice
1 cup apple juice (about)
1/3 cup dried currants
1/2 cup pure maple syrup
Large pinch ground cloves
Large pinch ground cinnamon
Preheat oven to 375 degrees. Core apples, remove seeds, peel away a bit
of skin, and stuff with currants. Set in oven-proof baking dish. Combine
lemon and apple juice with spices and maple syrup and pour over apples.
Bake uncovered for about 45 minutes, basting often. Serve warm.

Apple Baked Pork Chops
1 medium onion, peeled
2 oz raisins
7 fl oz unsweetened apple juice
3 Tbls chopped parsley
freshly ground pepper to taste
4 pork loin chops, approx. 6oz. each, trimmed of fat
2 Tbls dry white wine or cider
Core and finely chop the apple. Finely chop the onion. Place in a
saucepan with the raisins and apple juice. Simmer gently, uncovered, for
3-4 minutes until the apple begins to soften slightly.
Remove from the heat, drain off the juices and reserve. Stir the parsley
into the apple mixture with pepper to taste, then cool.
Meanwhile, make a horizontal cut through the flesh of the chops, almost
to the bone. Open out to form a pocket for the apple.
Spoon a little of the apple mixture into the pocket of each chop. Place in
a shallow flameproof dish. Mix the reserved juices with the
wine or cider and pour over the chops.
Cover with foil and bake in the oven at 350 degrees F for 45-60 minutes.
Caramel Apple Cheesecake
Serves 8
16 oz Softened cream cheese
1 Graham cracker pie crust
1/2 c Sugar
1/4 c Caramel ice cream topping
1/2 t Vanilla
1/4 c Chopped peanuts (optional)
2 Eggs
1 Sliced apple
1/3 c Apple juice concentrate
Mix cream cheese, sugar and vanilla at medium speed with electric mixer
until well blended. Add eggs; mix until blended. Blend in juice
concentrate. Pour into crust. Bake at 350F, 40 minutes or until center
is almost set. Cool. Refrigerate 3 hours or overnight. Drizzle with
topping and sprinkle with peanuts(optional) before serving. Garnish with apple
slices if desired.
