Granola

1/4 cup wheat
1/4 cup spelt
1/6 cup barley
1/6 cup oats
2 apples
7 oz other seasonal fruits
1 tbs. sunflower seeds
1 tbs. buckwheat
1 tsp. sesame seeds
2 tbs. honey
1 tsp. vanilla
1 tsp. cinnamon
1 1/4 heavy or whipping cream
1 tbs. chopped nuts
1 tbs. raisins
peppermint leaves
 

The night before, grind the spelt, wheat and barley.  Add the oats and just enough water to cover and leave it to soak overnight.
In the morning wash and grate the apples without peeling them.  Wash the other fruit and cut into small pieces.  Mix fruit with the grains.  Lightly roast the sunflower seeds and buckwheat and add with the sesame seeds to the mixture of cereals and fruit.  Add honey, vanilla and cinnamon to taste.  Fold in cream, which may be lightly whipped.  Garnish with nuts, raisins and peppermint leaves.
