1 1/2 cups cooked rice
1 egg beaten 1/2 cup shredded cheddar cheese 1/4 cup pizza sauce 1/3 cup sliced fresh mushrooms 1/3 cup thinly sliced zucchini 1/4 cup sliced ripe olives (optional) 1/4 cup chopped red pepper 1 cup shredded mozarella cheese 2 tbsp. grated Parmesan cheese 1 tbsp. chopped fresh parsley or fresh basil |
Combine rice, egg and cheddar cheese. Press into a greased 12"
pizza pan or 10" pie plate. Bake in a 400 deg. oven for 5 min.
Spread baked crust with pizza sauce. Layer with half of the mushrooms,
zucchini, olives and red pepper. Sprinkle with half of the mozzarella
and parmesan cheses. Repeat with remaining toppings and sprinkle
with parsley.
Bake in a 400 deg. oven for 8-10 minutes.
