pastry for 9" pie
1/2 c. milk
1 c. shredded cheddar
2 eggs, beaten
1 1/2 tbs. butter, melted
red pepper or paprika
1. Shape pastry into 24 1" balls.
2. Place in lightly greased 1 3/4" muffin pans, shaping each into a shell.
3. Bake at 350F for 5 min. Combine eggs, milk, butter, and cheese.
4. Stir well, and pour into pastry shells. Sprinkle with red pepper.
5. Bake at 350F for 25 min. or til set.
Yield: 24 quiche
Yield: 3 cups
2 1/4 c. tomato juice
1 med. carrot, scraped and sliced
1 stalk celery, sliced
1/2 c. seeded, chopped cucumber
2 green onions, chopped
1 (1/4" thick) slice lemon
1/2 tsp. celery salt
1/2 tsp. Worcestershire sauce
1/8 tsp. hot pepper sauce
Garnish: green onions
Combine first 9 ingredients in container of food processor or electric blender; process until smooth. Cover and chill. Ladle soup into individual serving bowls or store in refrigerator
in a tightly covered container up to 3 days. Garnish, if dessired.
