      Title: Black and Yellow Couscous
 Categories: Low-fat, Mcdougall
      Yield: 1 servings
 
  1 1/2 c  Water
      1 c  Couscous
    1/4 c  Orange juice
    1/4 c  Lemon juice
      1 tb Soy sauce
    1/4 ts Ground cumin
           Several twists of freshly
           -ground black
           Pepper
      1 ds Or two of tabasco sauce
      1 cn Black beans; (15 oz) drained
           And rinsed
  1 1/2 c  Frozen corn kernels; thawed
    1/2 c  Chopped fresh parsley or
           -cilantro
    1/4 c  Chopped green onions
 
  Bring the water to a boil in a medium saucepan. Stir in the couscous.
  Cover and remove from heat. Let rest for 5 minutes. Fluff with a fork.
  
  Meanwhile, combine the orange juice, lemon juice, soy sauce, cumin,
  pepper, and Tabasco. Set aside.
  
  Place the couscous, beans, corn, parsley or cilantro, and green
  onions in a bowl. Toss to mix. Pour the sauce over and toss again.
  Serve warm or cold.
