Adopted On December 27, 1990

Each year we celebrate Katelyn's adoption day as a special event, seperate from all the Christmas and New Year festivities. And each year she receives an Angel figurine on this day, for she is our "Special Angel"

And let's not forget about "China". She was adopted from the Humane Society in May of 1993. Katelyn herself signed the adoption papers, as we had done for her, so that China could become a member of our family. This event prepared Katelyn to understand why China was so special. It was then that we told Katie that she herself was a special girl and was adopted by us.

ITALIAN CHRISTMAS COOKIES

  • You will need 5 pounds of flour. Yes!! 5 pounds!!
  • BEAT IN BOWL
  • 1 dozen eggs
  • 2-1/2 cups sugar
  • 3 Tablespoons melted butter
  • 3 Tablespoons baking powder
  • Juice of 2 lemons & grated rinds
  • 3/4 bottle Anise

    Add flour unitl you can not stir. Turn out onto floured board and work with dough like you would bread dough. Roll small amounts of dough between your hands and then tie into knots and place onto cookie sheet. Put unused dough into bag so it doesn't dry out. Bake cookies at 375* for 10 minutes or until bottoms just turn golden. Let cool.

  • FROSTING

    Make a thin icing of confectoners sugar, anise and milk. Dip cookie in icing or I found it easier to line the cookies up on the counter and pour icing right on top of them. Then sprinkle with decorations before icing dries. (IMPORTANT-store in NON-AIRTIGHT container like a box. Makes 200-300 Cookies Happy Baking
