You may use 2 sage chickens, 12 doves, one large rabbit or dark meat such as venison with this recipe.

2 quarts stock
1/2 pound butter
6 medium onions
1 cup chopped parsley
6 diced peeled tomatoes
1 teaspoon pepper
3 tablespoons salt,
2 1/2 cups dry rice

Put in dutch oven and simmer until done.
