1 cup brown sugar
1/4 cup molasses or honey
1 egg
2 1/4 cups flour
2 tsps. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ground cloves
1/4 tsp. salt
sugar for coating
Mix brown sugar, shortening, molasses and egg. Stir in flour, soda,cinnamon, ginger, cloves and salt. Cover and refrigerate at least 1 hour. Heat oven to 375 degrees. Shape dough by rounded tsps. into balls. Roll in sugar. Place about 2 inches apart on lightly greased cookie sheet. Bake 8 to 10 minutes just until set. Remove immediately. Makes about 4 dozen. 85 calories per cookie.
