9 ozs. macaroni, cooked
1 cup grated cheese
1/2 cup bread crumbs(optional)
2 cups cheese sauce
4 tablespoons butter
4 tablespoons flour
2 cups milk, heated
1-1/2 cups cheese
Melt butter in heavy saucepan. Stir in flour and cook, stirring constantly until the paste bubbles a bit(about 2 minutes). Add the hot milk and continue to stir as the sauce thickens. Bring to a boil. Salt and pepper to taste and add cheese. Lower heat and cook, stirring, for 2-3 minutes. Remove from heat.
Grease a 2 qt. casserole dish. Put the macaroni in and pour cheese over and mix gently. Spread cheese evenly over top and then the bread crumbs over the cheese. Bake uncovered in a 375 degree oven for about 30 minutes. Top should be brown and sauce bubbling.
