Red Velvet Cake

Cake
2 1/2 cups flour
1 cup buttermilk
1 1/2 cups sugar
1 1/2 cups oil
1 tsp. salt
1 tsp. baking soda
1 tsp. vinegar
2 Tbsps.baking cocoa
2 ozs. red food color
2 eggs
1 tsp.vanilla

Grease and flour 2- 8 or 9 inch round cake pans.Mix dry ingredients together. In another bowl ream sugar & oil then add eggs and beat well. Add vinegar and coloring to sugar mixture. Mix well. Add flour alternating with buttermilk. Add vanilla and mix.  Divide batter equally into the cake pans. Bake at 350 degrees for 30-35 minutes. Remove from pans and let cool. Before frosting cut each cake in half and level if needed to form a 4 layer cake.

Frosting
1 stick butter
1 tsp. vanilla
1 8 oz. pkg cream cheese
3 cups powdered sugar
1 cup chopped nuts(optional)

Cream butter & cream cheese then add vanilla. Mix in powdered sugar then nuts. Frost cake and enjoy.
