RECIPE NAME:  LOW CHOLESTEROL MAYONNAISE 
RECIPE BY: BON APPETIT!
SERVING SIZE: 1 1/3 cups
PREPARATION TIME: 25 minutes
 INGREDIENTS:
1 - egg white -
1/2 teaspoon sugar -
1/2 teaspoon dry mustard -
1/4 to 1/3 teaspoon salt -
1/16 teaspoon white pepper -
few grains - cayenne pepper -
1 cup vegetable or olive oil -
2 tablespoons vinegar -
 
DIRECTIONS:
  • Combine egg white and seasonings in a small bowl.
  • Beat until foamy.
  • While beating constantly, add 1/2 cup of oil, a little at a time.
  • Beat in half the vinegar, then gradually beat in remaining oil.
  • Whip in remaining vinegar.
  • Turn into a jar with a tight-fitting lid, and store in refrigerator.
