What I am looking for is a recipe for Chicken Vesuvio and have not had much luck.  Can you help?

I'm hoping someone will be able to help me find a favourite recipe that I've lost.  It was a most unusual salad that everyone who tried it raved about.
The ingredients included: romaine, swiss or emental cheese, parmesan, onion, croutons and the dressing was a mix of beef consomme, olive oil, lemon juice, sugar and a little hot pepper sauce.
I cannot remember the proportions though and these are essential.

Je voudrais savoir comment faire du beurre clarifié.  Merci de votre réponse.

Une amie m'a raconté que la pluspart du temps, lorsqu'elle se fait du beurre à l'ail, son ail tourne à la couleur turquoise.  Elle a cherché comment faire pour que cela n'arrive plus mais rien à faire.  On lui a suggèré de changer son presse-ail, elle a utilisé des ustensiles de bois, en acier inoxidable, en plastique.....sans succès.
Connaissez-vous un truc pour remédier à ce problème?
