Great Gazpacho Cooler
1 1/4 cups chopped tomatoes
3/4 cup coarsely chopped, peeled English cucumber
1/4 cup chopped sweet green pepper
2 Tbsp chopped onion
1 clove garlic, minced
2 cups tomato juice (no sugar!)
2 Tbsp raw unpasteurized apple cider vinegar
1/4 tsp dill weed
dash hot pepper sauce
salt and pepper to taste
In food processor combine all ingredients. Refrigerate at least one hour to blend flavours Pour into chilled glasses, with or without ice.
Comment: I don't measure anything and I usually leave out the garlic so I can have this as a breakfast drink. I make it nice and thick, sometimes without the tomato juice but using canned tomatoes (my own) instead of chopped fresh ones, and just add water to thin it down. I throw in radish, yellow peppers, zucchini, whatever is in the fridge. It is delicious.
