   1      cup           lowfat cottage cheese
   1      cup           lowfat sour cream
   4      large         eggs
     3/4  cup           whole wheat flour
   1      Tablespoon    artificial sweetener -- spoonable
   1      teaspoon      salt

Combine cottage cheese, sour cream and eggs.  Beat together until well blended, but some of the cottage cheese curds will remain. Beat in flour, artificial sweetener, and salt.  Bake on a hot griddle, greased, if necessary.  Turn when top is bubbly and dry, then bake second side until browned.  Serve hot with butter and favorite sugar free topping.  I like unsweetened applesauce.

                      Oatmeal Buttermilk Pancakes

   1 1/2  cups          oats, rolled (raw) -- Old Fashioned
   2      cups          buttermilk
   2      cups          whole wheat flour -- stone ground
   2 1/2  tsp           baking powder
   1      tsp           salt
   2      large         eggs -- beaten
   2      tsp           artificial sweetener -- spoonable
     1/3  cup           canola oil
   2      tbs           toasted wheat germ -- optional

Pour milk over oatmeal and let stand 5 minutes.  To stone ground whole wheat flour, add baking powder and salt.  Add to oatmeal mixture.  Beat in eggs, artificial sweetener, wheat germ  and oil until well mixed but not necessarily smooth.  For each pancake, pour 1/4 cup batter onto a hot lightly greased or seasoned griddle.  Bake until bubbles form on top and bubbles begin to pop at edges.  Turn and bake other side until browned and pancake is cook throughout.  Serve hot with butter and your favorite topping.  Each serving is two pancakes each.  Makes 14 pancakes.

                           Whole Wheat Waffles

   1      cup           whole wheat flour
     1/4  cup           wheat germ, toasted
   2      teaspoons     baking soda
     1/4  teaspoon      kosher salt
   1      tablespoon    sugar substitute -- spoonable
   2      tablespoons   canola oil
   1 1/2  cups          buttermilk
   1      large         egg -- beaten

Combine dry ingredients in a medium-sized bowl.  Blend oil, buttermilk and egg together in a small bowl.  Add to dry ingredients.  Mix until combined.  Do not beat.  Heat waffle iron, brush lightly with oil if necessary.  Pour in enough batter to just fill.  Close and cook until steaming stops and waffles are crisp, about 4 minutes.  Serve with sugar free syrup or unsweetened applesauce.
