Beef


Lewis' Texas BBQ
Ingredients

1 1/2 lbs. Stewing beef
2 Tbs. brown sugar
1 tsp. salt
1 tsp. paprika
1 tsp. dry mustard
1/2 tsp. chili powder
1/2 cup water
1/4 cup vinegar
1 cup tomato juice
1/4 cup ketchup
2 Tbs. worcesthershire sauce
Hot sauce to taste


Instructions:
  1. Mix together all ingredients except beef in a pot, stir well
  2. Bring to a full boil and let cook 15 minutes. Remove from heat
  3. In the meantime, brown stewing beef, and place in an oven proof casserole dish.
  4. Pour BBQ sauce over stewing beef in the casserole and bake until meat is tender, about 1 hour.


Serving Suggestions & Notes:
Serve ontop of rice or egg noodles with a salsd for a good heartly meal.

Souvlaki
Ingredients

2 lb. pork loin cut into cubes
1/4 cup Olive oil
3 tsp. Lemon rind
2 cups Red wine
Sweet peppers and cherry
2 Garlic cloves; minced
tomatoes as needed
1 tsp. Oregano;dried


Instructions:
  1. Place the meat in a large bowl. Pour in the wine and sprinkle minced garlic and oregano. Add in the lemon strips among the cubes of meat and drizzle with olive oil.
  2. Cover tightly with plastic wrap and refrigerate 12 hours or overnight. Stir the mixture several times during the marination period.
  3. About 30 minutes before serving, drain off and discard the marinade. Thread the chunks of meat onto long skewers, brushing with a little olive oil.
  4. Barbeque the souvlaki until it's done the way you like it, turning often to ensure it's cooked all the way through.

Serving Suggestions & Notes: Remove meat from skewers and serve rolled up in Greek Pita bread with Tsatziki, chopped tomatoes, onions, and cucumbers.
