        Chocolate Chip Frosting ... I found this on the homepage of one of our guestbook signers. Please check out Sandy's Web Page! You will be glad that you did!!! It is "Beary Sweet"!!!
        1 1/2 C. sugar
        6 T. milk
        6 T. butter
        1/2 C. chocolate chips
        1/2 C. chopped nuts (optional)
        Put sugar, milk, butter in a saucepan on the stove cook over medium heat. Stir constantly. Boil 1/2 minute after mixture comes to a rolling boil. Take off stove add chocolate chips. Beat with a spoon until chips are all melted and spreadable It will set up once it cools down. Sprinkle nuts on top.



        Chocolate Fudge Icing ... This is from Cloppers' Family Favorites. Ron loves this on yellow cake. He takes a piece of the cake and puts it in a bowl then pours milk over it and eats it with a spoon. I have to look away until he is done. I find it gross but he loves it. He calls it cake soup.
        1 stick butter
        4 T. cocoa
        3 T. milk
        1 T. vanilla
        1-1 lb. box powdered sugar
        Melt butter in sauce pan then add remaining ingredients. Add more milk if need to make spreadable consistency. Keep over heat until well mixed. Spread on hot cake.


        Chocolate Icing ... makes a shiny icing
        12 oz. semisweet chocolate chips
        2 C. sour cream
        4 T. powdered sugar
        Microwave chips for about 1 minute. (Take the chips out and stir. They should be melted but in the microwave they won't look like it.) When the chips have melted, stir in sour cream by spoonfuls at a time. Stir in sugar and chill for about 30 minutes or until thick enough to spread.


        Cream Cheese Icing with a Twist
        1-8 oz. pkg. cream cheese
        1 lb. box powdered sugar
        1/2 C. oleo (butter to anyone born after the '60s LOL)
        2 t. vanilla
        1 C. chopped nuts
        1 can coconut
        Beat cream cheese until soft and light. Add remaining ingredients in order.


        Lemon Icing
        1/2 C. unsalted butter
        4 C. powdered sugar
        2 t. lemon extract or zest and juice of 1 lemon
        pinch of salt
        4 - 6 T. heavy cream
        Cream the butter, then slowly add sugar. Mix in the lemon and salt. Add remaining sugar and just enough cream to make a spreadable icing.


        Orange Glaze
        1 C. orange juice
        2 C. sugar
        2 t. orange zest
        Heat but do not boil, orange juice and sugar until sugar dissolves. Add orange zest.


        Red Velvet Cake Icing
        5 T. flour
        1 C. milk
        1 C. sugar
        1 C. butter or margarine
        1 t. vanilla
        Cook flour and milk until thick, stirring constantly. (Ron like to do this in the microwave to avoid
        scorching the milk. Just check it every minute and keep "nuking" until thick.) Cool (very important).
        Beat sugar and butter well with electric mixer. Add vanilla. Beat. Add to cool flour and milk mixture.
        Beat until fluffy like whipped cream. Set icing in refrigerator to chill before putting on cake.


        Vanilla Bread Icing
        1/2 C. powdered sugar
        1/4 t. vanilla
        1 - 2 t. milk (enough to make a thin drizzle)
        Mix milk with powdered sugar and vanilla until desired consistency.
