This dish can be made with leftover plain rice.

Ingredients
5 cups cooked white rice
1 sprig curry leaves
1 tsp mustard seeds
1 1/2 tablespoons oil for seasoning
1/2 tsp turmeric
1 tsp urad dal
1 tsp channa dal
2 dry red chillies, cut into small pieces
4 tsps shredded coconut/coconut flakes
Salt to taste
1 tsp lime juice
A pinch of hing(asoefetida)

Method
Heat the oil and add the dals and mustard seeds.
After a minute, add the red chillies and the curry leaves.
When the mustard crackles, add the turmeric powder and fry for
about 10 seconds.
Now add the coconut and lime juice.
Reduce the heat and stir well.
Add the cooked rice, hing and salt and mix well.
Heat through on a low flame.
Eat when hot.
