Ingredients : Vegetables(as below), salt(to taste), dry grated coconut(3 tblspns), green chillies/serano peppers(2), cumin seeds(1 tsp), curds/yoghurt(1 cup), curry leaves, ghee(1 tsp), coconut oil(1 tsp).
Vegetables that can be used : A combination of carrot, potato, beans, plantain, taro root, peas, drumstick(as in the Indian context..has nothing to do with chicken), chow chow, pumpkin etc.
Cut all the vegetables into big pieces.
Immerse in water, add salt and pressure
cook.
Once it is cooked, drain out the excess
water.
Grind together coconut, chillies, salt, cumin
seeds into a paste.
In a broad vessel, add the curds,
ground paste, cooked vegetables and mix well.
(Note : Do not put the vessel on the
flame, the mixing is to be done without heating).
Heat the ghee and coconut oil well.
Once it begins to smoke, place
a few curry leaves and a spoon of cumin seeds on the mixture and pour the
smoking oil/ghee on it.
This process will bring out a very good flavor
from the curry leaves and the cumin seeds.
Mix well.
Now put this whole mixture on the flame and
let it simmer for 2-3 minutes.
