Vegetables that can be used : Potato, cauliflower, okra, cabbage, taro root, egg plant, etc.
Ingredients : Salt, red chilli powder, dry mustard seeds(1/2 tsp), oil(1 tsp), urad daal(1/2 tsp), curry powder(optional).
Curry powder : Fry together one measure of channa daal with one measure of toor daal. Make it into a smooth powder. This can be stored for a long period of time.
In a non-stick pan, saute mustard and urad dal in a little oil. Add the vegetables(either precooked or otherwise), salt, currypowder(optional) and chilli powder. Mix well. If using raw vegetables, then close the pan until the veg cooks. If using cooked veg, just simmer till the spices blend well with the vegetable.
