Ingredients : Spinach/Methi leaves(1 bunch), oil(1 tsp), green chillies(2), dry red pepper(2), ginger(1 small piece), mustard seeds(1/2 tsp), fenugreek seeds/methi(1/2 tsp), cooking soda(1 pinch), tamarind extract/paste, turmeric(1/2 tsp), rasam powder(1/2 spoon), toor dal(2 tsp), rice flour(1 tsp), jaggery(1 tsp), salt(to taste).
Cut spinach into small pieces and wash well.
Pressure cook toor dal in water.
In a non-stick pan, heat the oil.
Saute chillies, red pepper, mustard seeds,
methi seeds(not required if using methi leaves), ginger, cooking
soda and mix well.
Add the spinach/methi leaves and let it cook
for sometime.
Once it is cooked, add the tamarind
extract, salt, rasam powder and simmer for a few minutes.
Add cooked toordal and jaggery.
If very watery, dissolve a spoon of
rice flour in a spoon of water and add to the mixture to give it consistency.
Mode of eating :
To be mixed with plain cooked rice and eaten
as a main course.
