Paalak Masala
(Paalak=Spinach available in the US)

Ingredients :  Spinach(1 bunch), medium sized onions(2), garlic(3 cloves), medium sized ripe tomatoes(2), green chillies(2), cloves(3-4),  cinnamon stick(!), bay leaves(1-2), salt(to taste),  coconut(1 tsp), ginger(1/2 tsp), oil(1 tblspn).

Cut the spinach into small pieces.
Grind all the above stuff together including the spinach adding water.
It becomes a smooth paste.
In a non-stick pan,   heat oil.
Pour the ground mixture into it.
Let it heat till all the oil comes up to the surface.
The raw smell of the spices will give way to a nice aroma.

Optional :
Garnish with paneer cubes or peas or cashewnuts roasted in ghee.

Mode of eating :
Can be had as a sidedish with any type of rice/pulav etc, or as a sidedish for chapathis and other types of bread.
