Keerai thandu Masiyal
(Keerai thandu=stem of spinach)
Ingredients :  Spinach stems(just don't throw away the stems..retain about 10-15 pieces, each about 2" in length),  cooking soda and other ingredients as for sambar.

Cook the spinach stems in water with a pinch of cooking soda.
Once this is done,   make sambar as always using these cooked stems in the place of vegetables.
The spinach stems give the sambar a rather refreshing taste in comparison to other vegetables.
