Thair Saadham(Curd Rice)
 
Ingredients : Curds(1 cup), cooked rice(1 cup), salt(as required), cilantro/coriander leaves(a small bunch), curry leaves(5-6), asafoetida(one pinch), mustard seeds(1/2 tsp), urad dhal(1/2 tsp), raisins and cashews(optional).

To make curds:
Boil milk well. Let it cool for sometime. Add some buttermilk or yeast to it and let it settle down overnight. Refrigerate in the morning.
Curds tastes pretty similar to plain yoghurt, if not better..
To make rice:
Use three measures of water for one measure of rice while cooking.
Mashed rice is anyday better for curd rice.
Saute mustard and urad dhal in a tsp of oil/ghee. Fry the curry leaves and the raisins and cashews in it.
Add the rice and mix well. Turn the stove off..
Add curds/buttermilk to the rice and mix well..add salt as required.
A little milk can be added to remove the sour taste in case the curds turn sour due to inadequate refrigeration.
Chop cilantro/coriander leaves into small fine pieces.
Garnish the curd rice with the chopped coriander leaves.
