Semiya Payasam
                                                  (Semiya=Vermicelli)

Ingredients :  Vermicelli(1 cup),  ghee(2 tsp), cashew(10), raisins(a handful), water(3/4 of a cup),  sugar(1 cup),  saffron(a pinch),  milk(1 cup),  cardamom(2-3 pods).

In a non stick pan,  heat 2 tsp of ghee.
Once the ghee begins smoking,  add the vermicelli and fry for a few minutes.
Bring the water to a boil.
Add the vermicelli to it and close the vessel.    Keep stirring occasionally.
Once the vermicelli is cooked,   add the sugar.
Keep stirring till the sugar dissolves.
Dissolve the saffron in a tsp of milk and add to the mixture.
Add powdered cardomom.
Roast cashews and raisins in ghee.   Add this also.
Mix well and boil for 2 minutes.
Remove from flame and add milk.
Stir well.

Can be served either hot or chilled.
