Wash the pressure cooker really well.
In a tall vessel, pour the milk, add
the rice and place inside the pressure cooker.
Make sure there is a lot of water in the cooker
around the vessel.
Cook just like you would cook plain rice.
Instead of turning the flame off, simmer
it down and let it remain for 1/2 an hour.
After this time, turn of the cooker
and do not open it for another 1/2 hour.
Letting the milk and rice remain in the steam
inside the cooker for one hour after the rice is cooked, will
give a very nice aroma. The milk turns to a light peach
color.
Take the vessel out of the cooker and place
it directly on the flame.
Add the sugar and stir till it dissolves.
Optional : If using skim or 1 % milk,
to give it some thickness, pour 1/2 a can of condensed milk into
the payasam and mix well.
If using 2 % or whole milk, addition
of condensed milk is not necessary..instead add about 1/4 cup of sugar
in excess to what is suggested above.
