Ingredients : All purpose flour/maida(2 cups), butter(100 gms..in the US..one stick), powdered sugar(2 tblspn), curds(2 tblspn), cooking soda(1 pinch), salt(1 pinch), baking powder(1 tsp), granulated sugar(1 1/2 cups), powdered cardomom(1/2 tsp.)
Mix together butter, cooking soda, powdered
sugar, curds, salt, baking powder.
Pour the flour on it and knead into a thick
dough.(optional..add milk to the dough and knead).
Roll out the dough and cut into small circles
using a cookie cutter.
Deep fry these small patties in oil.
Make a thick sugar syrup with 1/2 cup
water.
Add powdered cardomom to it.
Drop the fried patties into it.
Take it out of the syrup in a minute and stack
on a plate/cookie jar.
Tastes better when the badhusha cools and
the sugar crystallises.
Tips for better taste and longer life:
1. When deep frying, keep the
flame low.
2. Do not let the patties soak
in the sugar syrup for long...the badhushas will then become very soggy.
3. For the badhushas to last long, take
it off the syrup after it soaks for just one minute.
