This wonderful vegetable is a mainstay in our diet, served plain or like this.


CANDIED SWEET POTATOES OR YAMS

4 medium sweet potatoes or yams
1/4 lb. Butter or margarine
1/2 cup white sugar
1/2 cup brown sugar
1/3 cup corn syrup
Cinnamon, Nutmeg
2 Tbsp. Lemon juice (1 lemon or lemon juice)


METHOD

1. Boil potatoes until 1/2 done. Still firm when pierced with fork.

2. Peel and slice lengthwise in bottom layer casserole or baking pan.

3. 2nd layer: Dollop on butter or margarine

4. 3rd layer: sprinkle on sugars, and spices.

5. Pour a stream of syrup over all.

6. Sprinkle on lemon juice.

7. Repeat layers until all used up.

8. Bake at 400 degrees - 45 minutes to 1 hour.

Optional: If not enough syrup, don't be afraid to add more until contents are covered.

Serves 6 FANTASTIC!!!

Note: This dish keeps well in fridge, and freezes well when wrapped secure for up to 1 month.
