Chili is a bi-monthly favorite in our house.
Cincinnati Chili
1 lb. ground beef
1 can tomato paste
1 can Heinz New Orleans Style red kidney beans
1 large onion chopped
1 pack Franks Chili powder
(or use Cincinnati Chili powder and delete cinnamon and allspice)
1/4 tsp. cinnamon
1/8 tsp. allspice
2 cups grated medium or old cheddar cheese
8 oz. Spaghettini
METHOD
1. Saute onions and ground beef until cooked. Add kidney beans, undrained, tomato paste 1 cup water, chili powder, cinnamon, and allspice.
2. Have large pot with boiling salted water. Add 1 tsp. Oil. Add spaghetini (or spaghetti). Cook @ 8 minutes until almost done.
3. Pour off all water except approx. 2 cups (depending upon how dry or moist you prefer your Chili.)
4. Add chili mixture to spaghettini and cook on low about 5-10 minutes.
5. Serve with raw onions, grated cheese on top.
Variations:
1. Add 1 cup cooked chopped steak or stewing beef.
2. 2 teasp. cocoa (Texas style)
3. For creamier texture add 1 undiluted can tomato soup.
4. 1/2 - 1 cup chopped green peppers adds a very nice flavor for a change.
