This cake is one of my regulars when entertaining. A real crowd pleaser. Adults only please, especially if using 151 proof rum.  

 

GOLDEN RUM CAKE
 
 

1 box 2 layer size Yellow or Golden cake mix

1 Box vanilla instant pudding mix 

1 cup chopped pecans 

3/4 cup cold water 

1/3 cup cooking oil 

1/4 cup dark rum 

4 eggs

 
 

 

SYRUP
 

1 cup sugar 

1/2 cup butter 

1/2 cup water 

1/4 cup dark rum  

 

Method
 
  1. Sprinkle crushed pecans evenly in bottom of greased and floured 10" fluted tube pan.

  2. Combine cake ingredients, add the 1/4 cup rum. Blend well. Beat at medium for 2 minutes. Pour into prepared pan. 

  3. Bake in 325 oven 50-55 minutes or until cake tests done. Cool in pan 15 minutes. Invert on serving plate. 

  4. Prick cake with long-tined fork or skewer. 

  5. Prepare syrup:  In saucepan, combine sugar, butter and 1/2 cup water. Bring to boiling; boil 5 minutes, stirring constantly. Remove from heat. Stir in remaining rum. 

  6. Spoon hot glaze over warm cake.
