Granola isn't exactly Southern. However, it is a staple in our house. It is full of nutrients and downright delicious. We have it for breakfast three to four mornings a week.
GRANOLA
10 cups raw Oatmeal (lg. flake old fashioned)
Or (5 c. oatmeal and 5 c. wheat flakes)
1/2 cup oat bran
1 cup brown sugar or honey
1 cup cooking oil (Canola oil is best)
1/2 up Almond slivers
1 cup sunflower seeds (unsalted)
1/4 cup sesame seeds
1 to 2 cups raisins or currants
1/2 cup cut-up dried apricots
METHOD
Put all ingredients in large pot or bowl. Mix well. Bake 1/2 of mixture at a time in baking pan in 350 oven for 10 minutes. Mix well and bake another 5 minutes. Let cool and keep in tightly covered container.

Granola can be served hot. 2-3 Tbsp. In a bowl with 1/2 cup water. Bring to a boil and simmer 3 minutes or microwave on high 2 minutes. Stir after 1 minute.

Variation: Add cut-up dates or any dried fruit instead of apricots. Sometimes, I add a mixture of different fruits.

Yield: 15-16 cups.
