STRAWBERRY Custard Pie

1 baked pie shell
1 lb strawberries* sliced
1/2 cup white sugar
1/3 cup warmed apple jelly
2 cups cooked vanilla custard or pudding
2 cups whipped cream


METHOD

1. Pour custard or pudding into pie shell.
2. Arrange berries on top until covered.
3. Pour warmed apple jelly over berries.
4. Cover with whipped cream in peaks* and serve when cold.


* In summer, use fresh whole berries. In winter use frozen dry, or drained if packed in syrup. Proceed as above.

You may also make a jelly with strawberry syrup by adding gelatin and cooking according to your favorite recipe. When cool, proceed as above.

To use Jello brand jello for a jello layer: Add 1 cup hot water to powder. Stir until well dissolved. Use strawberry syrup adding enough cold water to make 1 cup. Add to mixture and stir. Put in fridge. When beginning to set; at egg white consistency, pour onto strawberries. Allow to completely gel. Cover with whipped cream as above.

**Create peaks by using back of spoon, making short lifting motions to simulate peaks.
