     Ame's Spaghetti Sauce

     Amount Measure Ingredient -- Preparation Method

     roma tomatoes
     garlic cloves
     fresh basil
     fresh oregano
     fresh parsley
     pinch cinnamon
     pinch nutmeg
     garlic salt -- optional
     onion
     salt
     pepper
     tomato paste
     bay leaves
     brown sugar or honey -- optional

     Dice the veggies (onion, garlic & tomatoes) and add to a tomato paste base. Add
     the veggies. Chop the herbs and add. Add just a pinch of nutmeg and cinnamon.
     Salt & pepper to taste. If you'd like to sweeten it up a bit add some brown sugar or
     honey. Add garlic salt for extra garlic punch (this is the way I love it) Add apx. 1
     bay leave per quart of sauce. Simmer, covered, for at least an hour, preferably
     several. If it starts reducing too much, add a little water. When the flavors have
     combined nicely, remove bay leaves. Pour into quart jars for spaghetti sauce and
     pint jars for pizza sauce. Process in a pressure canner for 20min-pints or
     25min-quarts
NOTES : I'm one of those people with an allergic reaction to measuring utensils so
     everything here is to taste pretty much
