Glazed Carrots

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 30 1/2 pounds carrots -- (61/2 to 7) 2 cups brown sugar 2 cups water 1 cup orange juice Prepare syrup by combining brown sugar -- water and orange juice. Cook over Med. heat until sugar is dissolved. Keep syrup hot. Wash and scrape carrots. Wash again. Cut carrots into 3 inch pieces. Slice thicker ends in half length wise. Pack carrots tightly -- leaving 1 inch head into jars. Pour syrup over carrots -- leaving 1 inch head space. Remove bubbles. Adjust caps. Process 30 min. at 10 pounds pressure. Yield about 3 quarts.
