Basic Meat Balls

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 eggs 6 cups soft bread crumbs 1 1/2 cups water 1 cup finely chopped onion 1 tablespoon salt 1/4 teaspoon pepper 6 pounds ground beef
In large bowl combine first 6 ingredients. Add beef; mix well. Shape into 12 dozen 1-inch meatballs. Place in shallow baking pan. Bake at 425~ for 15 minutes. Pack loosely into hot jars, leaving 1-inch headspace. Add boiling water or meat juice, leaving 1- inch headspace. Adjust lids. Process in pressure canner at 10 pounds pressure(pints)75 minutes;(quarts)90 minutes. Makes 8 pints.
