BOW TIES WITH BROCCOLI AND MUSHROOMS

Want a change from meat and potatoes?

(Serves 4)

Ingredients:

  • 1 pound bow ties
  • 1/4 cup olive oil
  • 12 ounces broccoli florets, steamed
  • 3 cloves garlic, minced
  • 1/4 cup scallions, chopped
  • 1-1/2 cup mushrooms, sliced
  • 2 teaspoons fresh parsley, chopped
  • parmesan cheese

Bechamel Sauce

  • 1/4 cup flour
  • 1/4 cup butter
  • 1 quart milk
  • 2 packets MBT chicken broth (optional)

Directions:

Béchamel Sauce - Melt butter in a large skillet over medium heat. Stir in flour with a wooden spoon or wire whip and cook for one minute. Add milk and chicken broth and stir every so often until mixture comes to a boil. Reduce heat and simmer for 5 minutes, stirring often. Steam broccoli. Drain. Divide in half. Half of the broccoli chop into ¼ inch pieces. Now add all the broccoli, garlic, scallions, parsley, and mushrooms to the skillet with the béchamel sauce. Simmer for about two minutes, stirring constantly. Mix with cooked bow ties and serve. Top with parmesan cheese.
