Kucina nang Atching Aileen

Arroz Caldong Manuk (Lelut Manuk)
  • 2 tablespoon lard
  • 2 segments garlic, bruised
  • 1 inch cube ginger, sliced thin

  • 1 small onion, chopped
  • 1 small chicken dressed, cut into serving pieces
  • 3 tablespoons patis or toyu
  • 1 ˝ cups enriched rice
  • 6 cups water
  • 2 stalks green onions, chopped

    1. Saute garlic, ginger and onion.
    2. Add chicken and flavor with patis or toyu.
    3. Cover for 2 minutes.
    4. Add enriched rice and ater, stirring all ingredients together to avoid sticking to the sides of the pan.

    6. Add green onions before serving.
    7. Makes 10-12 servings.

    Sinigang (pork,shrimp,beef)

  • 1 lbs.pork or shrimp or beef)
  • 1 pouch Philippine Tamarind Seasoning Mix
  • 3 oz string beans (kamanyang)
  • 1/4 lb. white radish
  • 1/4 lb. okra
  • 4 pcs. small onion
  • 2 pcs. chili or jalapeno peppers
  • 4 pcs.small tomato
  • 2 oz spinach (coz we don't have kangkong here)

  • 2 tbsp. fish sauce (patis)
  • 7 cups water

    1. Simmer pork, onion, chili or jalapeno peppers, tomato, and Philippine Tamarind Seasoning Mix, for about 25 minutes.
    2. Add string beans, okra, white radish, and fish sauce. Continue to simmer for 5 minutes.
    3. Turn off the heat add spinach.
    4. Serve with patis and steamed rice.
    5. Make 5-6 servings.

    Chicken Adobo or Pork

  • 1-2 lbs. chicken (cut into serving pieces)
  • 4 pcs. potatoes (cut into cubes)
  • 1 small onion
  • 1 green or red pepper
  • 1/2 cup white vinegar
  • 1 cup soy sauce
  • 2 cloves garlic
  • 1/2 tbsp. peppercorn or black pepper

    1. In a medium pot, put all the ingredients together. Simmer for about 10 minutes
    2. Add 4 cups of water. Continue to cook until chicken and potatoes are tender.
    3. Serve hot with steamed rice.
    4. Make 5-6 servings.

    Tinolang Manuk

  • 1-2 lbs. chicken (cut into serving pieces)
  • 1 small green papaya or 2 pcs. chayote(sayote)
  • 1 small onion
  • 2 cloves garlic
  • 1/4 lb. ginger
  • 2 oz leafy green vegetable(example spinach)

    1. Saute ginger,onion and garlic. Until are tender brown.
    2. Add chicken and stir,until its tender brown.
    3. Add 5 cups water and simmer for 5 minutes.
    4. Add green papaya or sayote. Continue to cook,until papaya or sayote are tender.
    5. Turn off the heat and add leafy green vegetables or spinach.
    6. Make 5-6 servings.

    Paksing Bangus

  • 1 lbs. milkfish (bangus)
  • 1/2 cup white vinegar
  • 1 small onion
  • 1/2 tbsp. peppers
  • 2 cloves garlic
  • 2 pcs. chili or jalapeno peppers
  • 1/2 lbs. eggplant(balasenas) if desired

    1. Put all the ingredients together in a medium pot. Simmer for 15 minutes.
    2. Add 2 cups of water. Continue to cook, until eggplant are tender.
    3. Serve with fry or steamed rice.
    4. Make 2-3 serving.

    Nilagang Babi

  • 1-2 lbs. babi (pork)
  • 1 gabbage(ripolyu)
  • 1/2 lb. white radish
  • 1 small onion
  • 1/2 tbsp. peppercorns
  • 4 pcs. banana(saba)
  • 3 oz petchay or leafy green vegetables
  • 2 tbsp. fish sauce(patis)

    1. Bring 6 cups of water to a boil, add pork, onion, patis and peppercorns. Simmer for 25 minutes.
    2. Add white radish and banana (saba). Continue to simmer for 10 minutes.
    3. Add gabbage and petchay or other leafy green vegetables, simmer for another 3 minutes.
    4. Serve hot with steamed rice.
    5. Make 5-6 serving.

    Menudo

  • 1 lb. pork
  • 2 pcs.lemon
  • 1/2 cup soy sauce
  • 2 cloves garlic
  • 1 small onion
  • 15 oz tomato sauce
  • 3 pcs. medium potatoes(cut into cubes)
  • 2 pcs.carrots
  • hotdogs(if desired)
  • 2 bay leaf

    1. In a medium pot, simmer pork with lemon and soy sauce for 10 minutes.
    2. Meanwhile, fry carrots, potatoes and hotdogs in cooking, until they are tender brown.
    3. Saute garlic, onion, in 1 tbsp. cooking oil until are brown, add all the ingredients and tomato sauce, add 3 cups water. Continue to cook until pork are tender.
    4. Serve hot with steamed rice.
    5. Make 4-5 servings.

    Apritadang Manuk

  • 1-2 lbs. chicken (cut into serving pieces)
  • 3 pcs.potatoes(cubed)
  • 14 oz can pimentos
  • 1 tbsp.peppercorns
  • 2 bay leaf
  • 3 cloves garlic
  • 15 oz can tomato sauce
  • 1/2 cup water
  • 1/2 tbsp. black pepper
  • 1 onion
  • 2 pcs.carrots
  • 1 tbsp.salt

    1. Simmer chicken with garlic, onion, tomato sauce, bay leaf, peppercorns, salt and water, for 15 minutes.
    2. Add potatoes and pimentos. Continue to cook until potatoes are tender.
    3. Serve hot with steamed rice.
    4. Make 4-5 servings.

    Lumpia

  • 1 lb. ground beef
  • 340 oz bean sprouts(tauge,chopped)
  • 1 onion (chopped)
  • 3 dozen wrappers(egg roll wrappers)
  • 2 pcs. carrots(chopped)
  • 2 cups chopped cabbage
  • 1 tbsp. salt
  • 4 sticks celery(chopped)
  • 3 cloves garlic
  • 1/4 green beans(cut very thin)
  • 1 tbsp. black pepper(if desire)

    1. Heat the groud beef until it is tender brown(drained).
    2. Saute garlic and onion into 1 tbsp. cooking oil, add drained beef and stir.
    3. Add all the ingredients with salt, stir occasionally until vegetables are half cooked.
    4. Remove from heat and let stand 7 minutes. And start to roll in wrappers, diagonally.
    5. Cook in frying pan till brown, turning as needed.
    6. Serve hot with sweet and sour sauce or ketchup.

    Pansit

  • 1 lb. chicken
  • 1 lb. pork
  • 1/4 lb. green beans
  • 1 green bell pepper
  • 1/2 head cabbage(ripolyu)
  • 2 pcs.carrots
  • 3 cloves garlic
  • 1 onion
  • 2 sticks celery
  • soy sauce or fish sauce(patis)
  • 1 tbsp. black pepper
  • 1 pack.pancit bihon
  • 3-4 green onions
  • 1 1/2 tbsp. cooking oil
  • lemon

    1. Boil chicken until it is tender. Remove meat from bones.
    2. Saute garlic and onion, until they are brown. Add chicken and pork with soy sauce or patis and black pepper, stir until pork are tender brown.
    3. Add all ingredients except noodles(pancit bihon), and chicken broth. Simmer for 5 minutes.
    4. Add the noodles(pancit canton)(by the way, make sure it is first under warm water, then drained). Stir occasionally until noodles are soft. 5. Serve with green onion and lemon. 6. Make 7-8 servings.
