CHICKEN-ALMOND SALAD |
very lo-cal as is but weightwatchers mayo will make it even lower |
2 cups diced chicken breast 1 tsp salt 1 cup chopped celery 2 tsp vinager 1/3 cup sliced ripe olives 1/2 cup mayonnaise 1 cup shredded toasted Almonds Combine all ingredients & toss lightly. Line a bowl with lettuce and place chicken salad on lettuce, garnish with almond slivers |

HEARTY DIXIE SALAD |
Great as just a meal by itself for a light lunch |
2 cups diced sweet potatoes 1/4 cup mayonnaise 1 1/2 cups diced celery 1/2 tsp vinager 1 1/2 cups diced cooked ham 6 medium oranges, peeled and diced Toss all ingredients. Chill in refrigerator about 1 hour. Serve in cups or small bowls lined with lettuce. Garnish as desired. (I like the contrast of chopped pimentoes) |

PORK 'n' BEAN FRITO SALAD |
An all time favorite of my kids,they made a meal of it |
Start with one medium size head of iceberg lettuce. tear into semi large bite-size pieces. Empty 1 can of pork 'n' beans into this (toss) Add about 1/3 cup sliced radishes (toss) Add about 1/4 cup black olives (toss again) Add 1 medium size tomato sliced in thin wedges Add 1 small bottle of Catalina dressing Add 1 medium size package of Fritos Mix all ingerdients gently and serve immediately |

SPINACH, BACON,& EGG SALAD |

For Salad you will need: 1 tblsp.vegetable oil 4 slices of turkey bacon 2 lg eggs beaten 8 cups of torn fresh spinach leaves 8 ounces of sliced mushrooms 2 green onions sliced **************************************************** for cider vinager dressing you will need: 1/4 cup of olive oil 1 tblsp of sugar 2 tblsps. of cider vinager 1/4 tsp. of grnd. black pepper. In a large skillet heat vegetable oil over med.heat, add bacon and cook until crisp. Drain on towel and crumble. (leave drippings in pan) Add beaten eggs to skillet and cook until set on one side, then turn and cook other side. (do not scramble) Transfer eggs to a plate and cut in strips (at this point make the dressing by putting all ingredients in a jar or cruet and shake well) In a large bowl combine spinach, mushrooms and onions. Lay egg strips & bacon on top, toss gently, drizzle dressing over salad, toss until coated and serve. |

BASIC SALAD BUILDERS |
Naturally when you see salad, we all envision lettuce. There are so many kinds available now, why limit yourself to the same ones. Take your favorite salad and use a different type of salad green to create a new taste. Or blend a mixture of several for a garden medly. Different types of dressings too will give a whole new outlook to an old favorite. Toss in a few fresh sliced mushroom, or garnish with chopped nuts. Both are highly nutritioal too.I am including a few simple, and a few not so simple dressings that you can make for that whole new outlook. (try some of them on hot vegetables too. No this is not all the salad recipes but wanted to mention this before I forgot to put it in. Keep following those links. |

HAM and POTATO SALAD |
You will need: 4 tblsp margarine or butter some cooked peas 1/8 lb (1/2 cup) mushrooms (cooked frozen best) about 1/2 - 3/4 lb potatoes mayonnaise 1/4 - 1/2 lb diced ham GARNISH: lettuce tomato Heat the margarine (or butter), saute the sliced mushrooms and allow to cool. Cook the potatoes by boiling or steaming,dice and then mix with the ham, peas, mushrooms and mayonnaise while warm. Allow to cool. Serve on a bed of lettuce with sliced tomatoes. This makes a delicious hot salad if crisply fried bacon or boiled ham is used instead of cold ham. Make sure the peas and mushrooms are hot. |
