Note this is a Passover recipe. You can use egg matzo for the crust or you can make a graham cracker crust or regular pie crust [if regular pie crust bake as per instructions for a pie crust]
Cheese Pie
preheat oven to 350degrees
3 sheets egg matzo crumbled
1/2 stick melted saltless butter or margarine
mix & bake 5 minutes

9 oz. cream cheese
1/2 cup sugar
2 eggs
juice of 1/2 lemon
1 t. vanilla [optional]
mix very well so all the cream cheese is thoroughly mixed into the filling. pour over crust and bake 15 to 20 minutes ----- cool

8 oz. sour cream [not fat free]
2T. sugar
fold sugar into sour cream. spread on top of filling and bake for 5 minutes. Cool and refrigerate.
