MC's Luckshen Kugel


8 oz. wide noodles

1/2 C. sugar

1 C. milk

1 t. vanilla

8 oz. cottage cheese

2 oz. butter

8 oz. sour cream *

corn flakes crumbs

2 eggs (beaten)

cinnamon sugar

optionals raisins or small can crushed pineapple

Boil noodles till barely tender then drain. Beat eggs and add cottage cheese, sour cream, milk, sugar and vanilla, mix well (add raisins to mixture if desired, the amount of raisins depends on your family, mine says there is never too many). Grease a 2 qt. oblong pan. Put noodles in pan and add liquid. Stir lightly. Sprinkle with corn flake crumbs, then cinnamon sugar. Dot with butter. Bake in preheated 400 oven for 1 hour or until well browned. Freezes well. *When using fat-free sour cream whisk it well with the eggs before adding rest of the ingredients. ** For a fancy kugel omit raisins. Drain pineapple well. Add half of noodles to pan then half of liquid, spread pineapple evenly over mixture, add rest of noodles and liquid. Finish as above.
