Annie's Chocolate Cheesecake


(serves 6-8 people)

First, prepare a chocolate wafer crumb crust in a medium-sized springform pan. (1 C. wafers, 2 Tbsp. melted butter, 1/4 C. sugar)

****Filling Ingredients****

3 packages of cream cheese (1.5 lbs.)

3 eggs

1 tsp. vanilla

1 C. sour cream

1 C. sugar

****Method****

1. Place chocolate over hot water and allow to melt slowly with an occasional, gentle stirring.

2. Beat cream cheese and sugar together till fluffy. Add melted chocolate and blend well, then add the 3 eggs (already beaten), vanilla, and sour cream. Beat all ingredients together.

3. Pour over crust and bake for 50 to 60 minutes in a preheated 350 degree oven.

4. Cool till "set" then remove from pan.

****Note**** Run a sharp knife around outside edge or cake so that it leaves the pan cleanly.

My tricks... if centre cracks or sinks slightly... raspberry sauce is wonderful, as is filling the centre with whipped cream and top with fresh seasonal berries. The platter can be decorated with icing sugar dusted through a doily (leaves the pattern) or garnished with berries and sprigs of mint. Enjoy!
