Breakfast Ideas
Egg Bake

3/4 to 1 lb. sausage, bacon, or ham, cooked and chopped
6 - 9 slices of bread, quartered
1/4 lb. Monterey Jack Cheese, grated
1/4 lb. sharp Cheddar Cheese, grated
1/4 lb mushrooms, sliced
1/4 cup onion, chopped
6 eggs
3 cups milk
1/2 tsp.salt

Grease 9x13 baking dish. Place bread on bottom of dish, layer cheese, mushrooms, onions, and meat. Combine eggs, milk, and salt using mixer or blender and pour over top. Refrigerate overnight. Bake at 350 degrees for 30 - 45 mins. or until center is set.
Squash Muffins

1 egg
1/4 cup sugar
1/2 cup milk
1 3/4 cup cooked squash
2 teas. cream of tartar
1 teas. soda
1/2 teas. salt
4 tabls. melted shortening or oil

Beat egg and sugar, add milk & squash. Sift flour combine with egg mixture. do lightly. add shortening. Turn into muffin tins. Bake 375
degrees for about 20 mins.
English Muffin Bread

5 1/2- 6 cups flour
2 pkgs yeast
1 tbsp. sugar
1/4 tsp soda
2 tsp. salt

warm to quite hot temp.
2 cups milk
1/2 cup water

add liquid to dry ingredients with only 3 cups of flour at first and beat until mixed well. Then add remaining flour.

Spoon half of the batter into regular sized bread pan that has been greased and dusted with corn meal.

Then sprinkle corn meal on top of dough and let rise for 45 mins., and cook in pre-heated oven at 400 degrees for 25 ins.

Remove bread from pans as soon as you take out of oven.


Pumpkin Chocolate Chip Muffins


1 2/3 cup flour
1 cup granulated sugar
1 Tablespoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1 cup plain pumpkin
1/2 cup butter melted
1 cup chocolate chips

Mix together in a large bowl all of the dry ingredients add eggs, pumpkin, butter fold just until moist, then fold in chocolate chips.

Bake 20-25 mins at 350 degrees. makes 12 regular size muffins or 48 mini muffins
Strawberry Smoothies

2 ripe small bananas
1 cup frozen unsweetened whole strawberries
1 8 ounce carton vanilla low-fat yogurt
3/4 cup milk

Peel and cut banana into chunks, add to blender with strawberries, yogurt, and milk. Cover and blend on high speed for about 1 minute.

Makes two drinks
Tropical Smoothie

1 medium banana
1 8-ounce can crushed pineapple, juice pack
1 8-ounce carton of vanilla yogurt
1 cup orange juice

Peel and cut banana into chunks, and freeze for at least 2 hours. Place frozen banana chunks, pineapple with juice, yogurt and orange juice in blender and blend til smooth.

makes 4-6 ounce servings
