Mexican Chicken Casserole

*PREPARE THE DAY OR EVENING BEFORE*

1 can cream of mushroom soup 

1 can cream of chicken soup 

7 - 8 oz salsa 

1 cup of milk 

1 medium onion, chopped 

12 corn tortillas 

6 cooked chicken breasts, shredded 

7 oz can ortega chiles 

1/2 lb jack cheese, grated 

1/2 lb cheddar cheese, grated 

(Ripe olives may also be added) 

 

Combine first five ingredients.  Tear or cut

tortillas into 1" strips. In a 9 x 13  buttered

casserole dish, layer the ingredients in this order ( 3 times)

Tortilla strips          Chicken           Sauce          Chiles          Cheese 

 

Bake at 300 degrees for 1 - 1 1/2 hours. 

Let set for a while before serving.

Rice and Tuna Casserole

1 can of tuna

2/3 cups of rice

1 can of cream of chicken

1 can of water

1 T. of dried minced onion

salt and pepper to taste

Mix all ingrediants together. Put in a well buttered casserole. Bake at 350 for 1 hour.

Auntie Bea Cookies

4 cups flour

2 cups sugar

2 tsp. baking soda

2 tsp. nutmeg

2 tsp. cinnamon

1 1/2 cups oil

4 eggs

2 tsp. vanilla

2 cups raisins

4 cups oatmeal

1 cup milk

1 jar of mince meat

1 lg bag of chocolate chips

nuts, chopped

Bake at 300-325 about 12 minutes on a greased cookie sheet

This makes 150 or more cookies

Use your largest bowl

Green Chili Burritos

1 large pot roast

1 large onion

1 large can diced tomatoes

4 small cans diced green chilis

1 teaspoon Season Salt

1 teaspoon garlic powder

2 tablespoons chili powder

1 tablespoon celantro

1 to 2 teaspoons crushed red peppers

Boil roast until it falls apart. Let it cool then shred it in a big pot. Add the rest of the ingredients and cook until the onions are transparent. Spoon onto a burrito size tortilla and fold in sides. Then roll into a burrito. Cover with enchilada sauce and sprinkle with cheese and microwave for 2 minutes on high.

Smilin's Lasagna

*Red Sauce

1 Green Pepper

1/2 Onion

4 cloves Garlic ... good sized

1 pinch salt for the meat

4lbs ground beef (lean as possible)

4 big cans tomato sauce

2 cans tomato paste med can.

3 tomato paste cans of water

2 pinches of salt for the sauce

Dice the vegetable into small bits.

Add the veggies plus 1 pinch salt into the raw meat.

Form into meatballs.

Add meatballs to the tomato sauce, paste, water & salt.

You want the sauce to be a bit loose, as it will be cooked down over the day.

Simmer, uncovered, for 1 day stirring occassionally.

In the morning, use bread to degrease.

Mash meatballs & simmer for 1 hour.

White Sauce

1 pkg cream cheese

1 container sour cream

1 container cottage cheese

Melt these together over low heat

(You make this sauce when you're ready to put the lasagna together)

Follow package directions for the lasagna noodles.

Making the pan of Lasagna

You cover the bottom of your pan with red sauce.

One layer of noodle.

Cover in white sauce.

One layer of noodle.

Cover in red sauce.

One layer of noodle.

Cover in white sauce.

One layer of noodle.

Cover in red sauce.

Top with LOTS of Motzerella cheese.

Bake at 350 for about 45-60 minutes. (Or until bubbily and lightly browned on top)

Must taste this to believe it!! Trust me!!
